Raspberry Crumble Bars

These raspberry crumble bars have just the right amount of granola and sneak onto your breakfast plate. They’re tangy, sweet, and melt in your mouth delicious!
Ingredient List
- 1 egg white
- 1/2 cup butter, softened
- 1/4 cup cane sugar
- 1 teaspoon vanilla
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups Cascadian Farm™ Organic Oats & Honey Granola
- 1 cup raspberry preserves (approximately 1, 13 oz jar)
Preparation
- Heat oven to 375°F. Grease 8-inch square pan.
- In large bowl, beat egg white, butter, sugar and vanilla with whisk until creamy.
- Mix in flour, baking powder and baking soda. Stir in granola.
- Press about two-thirds of the dough in bottom of pan. Spread preserves over dough to within a 1/4 inch of edges. Crumble remaining one-third of dough on top of the fruit.
- Bake 25 to 30 minutes or until golden brown and set. Cool completely, about 30 minutes.
- Cut into bars and enjoy immediately or store in the refrigerator until ready to eat.
